Beyond Pumpkin Pie: 4 Unexpected Pumpkin Recipes
Everywhere I turn in October, there’s pumpkin — from pumpkin pie and pumpkin spice lattes to pumpkin bread. I love them all. But some of my favorite ways to cook with pumpkin are a little less expected.
Today, I’m sharing four cozy, creative pumpkin recipes I think you’ll love. They’re easy to make, family-friendly, and just the right kind of seasonal comfort for these late-October days.
1. Pumpkin Overnight Oats
Creamy, lightly spiced, and naturally sweetened — this make-ahead breakfast feels like pumpkin pie in a bowl, without any of the guilt. I often prep these jars in the evening, so breakfast the next morning feels just a little more special.
2. Pumpkin Mac & Cheese
A savory twist that’s become a comfort food favorite at our house. The pumpkin adds a subtle earthiness to the sauce, making it extra creamy and pairing perfectly with cheddar. I love serving this on chilly nights when we want something cozy but quick.
3. Pumpkin Hummus
Silky, spiced, and a little unexpected — this hummus is perfect for fall snacking, serving with crackers or veggies, or as an appetizer for a casual gathering. I’ve made it ahead for game days or kept a small bowl in the fridge for weekday grazing.
4. Coconut Pecan Pumpkin Muffins
Moist, tender, and coffee-shop worthy, these muffins bring together pumpkin, warm spices, and a touch of coconut. They’re one of my favorite “bake now, enjoy later” recipes — perfect with an afternoon cup of tea.
From My Table to Yours
Pumpkin has always felt like the flavor of cozy gatherings in my kitchen. While I’ll never pass up a slice of pie, I’ve found joy in these less-traditional recipes — the ones I make for quick breakfasts, casual weeknight dinners, or a little afternoon pause with tea. They remind me that the season isn’t just about the big celebrations, but the small, everyday moments around the table.
🍂 However you enjoy pumpkin this season — sweet, savory, or somewhere in between — I hope these recipes bring a little warmth and inspiration to your week!
Until next time,
Stephanie
