Dear friend,

This is the kind of recipe I love for a summer weekend.

It looks like something you might bring home from a bakery box, but it begins with a sheet of store-bought puff pastry, a quick blueberry filling, and a soft almond cream cheese center that takes only a few minutes to stir together.

In other words, it feels special without asking too much.

And that feels exactly right for this weekend.

With Father’s Day just ahead — and all the schedules, plans, gatherings, errands, and summer beginnings that seem to arrive at once — I wanted to share something simple, pretty, and very doable. Something you could make on Saturday morning, serve for Sunday brunch, or tuck onto a tray with coffee or tea when everyone wanders into the kitchen.

This Blueberry Puff Pastry Danish is buttery and flaky, filled with a lightly sweet almond cream cheese filling, spooned with jammy blueberries, and finished with a simple lemon glaze. A few sliced almonds make it pretty, but even without them, it’s the kind of bake that makes the morning feel a little more generous.

Why this recipe belongs in your summer back pocket

This recipe is one of those small kitchen wins that feels much bigger than the effort required.

The puff pastry does most of the work, baking into golden, flaky layers with very little coaxing. The cream cheese filling gives the pastry that classic danish richness, while almond extract adds a soft bakery-style flavor I love with blueberries. And the blueberry filling is simple — just berries, sugar, and lemon juice cooked until thick and jammy.

It’s a lovely recipe for Father’s Day weekend, but it’s not limited to one occasion.

I’d make these for a slow Saturday morning, an afternoon tea tray, a summer brunch, or anytime you want something that feels beautiful but still fits into real life.
