One Simple Thing: The First Taste of Spring

Earlier this week, the table was filled with warm soda bread and the comforting traditions of St. Patrick’s Day. For us, that meant corned beef and cabbage one evening, Irish lamb stew the day before, and tonight, a simple corned beef hash with eggs.
And then, almost without noticing, the refrigerator begins to empty. The last of one season, making space for the next.
This week… something shifts.
Not all at once. Not in bold, sweeping ways.
Just quietly.
The light lingers a little longer in the evening. The air feels softer. And in the kitchen, almost without thinking, you begin to reach for something a little brighter.
A squeeze of lemon.
A handful of herbs.
A plate that feels just a bit lighter than it did a week ago.
It’s not quite spring cooking.
But it’s close.

Add one fresh, bright element to something you’re already making.

A quick pasta tossed with sautéed spinach or kale, olive oil, and garlic, finished with Parmesan and a squeeze of lemon. (This reminds me a bit of my crème fraîche pasta, which is always a favorite.)
3. Herbed Rice Bowls with a Fried Egg
Warm rice topped with soft herbs, olive oil, and a fried or poached egg. Add avocado or greens if you have them—simple, satisfying, and endlessly adaptable.
4. Warm White Bean and Vegetable Skillet
Cannellini beans warmed with garlic, olive oil, and tender vegetables like zucchini, carrots, or greens. Serve with crusty bread for an easy, nourishing meal.
5. Asparagus (or Any Green Vegetable) with Lemon Butter
A quick sauté with butter, lemon, and a pinch of salt is sometimes all you need. (I make this simple sautéed asparagus often this time of year.)

There’s a moment between seasons that doesn’t get much attention.
