Soup Sundays: The First Soup I Fell in Love With
Since Soup Sundays is just beginning, I thought I’d share the very first soup I ever fell in love with. Years ago, I discovered a rustic Tuscan Bean Soup, and it’s been part of my kitchen ever since.
Ribollita: Tuscan Bean Soup
It’s a simple pot of beans, tomatoes, butternut, herbs, and greens—humble ingredients that somehow come together into something deeply comforting. Traditionally, I soak dried beans overnight, but today I’m using canned beans, and it’s every bit as hearty and satisfying.
This is the soup that taught me how timeless, nourishing, and grounding a Sunday pot can be.
