Two Simple Things
Late Summer + Back-to-School
The last days of August feel like they carry two seasons at once: summer’s abundance still spilling over with peaches, corn, and zucchini — and the beginnings of fall creeping in with sharpened pencils, cooler mornings, and the rhythm of back-to-school.
As we move into late August, I’ve been thinking about the beauty of these in-between days. A chance to savor what’s left of summer while easing into routines that will carry us into September.
Two Simple Things
1. Fresh Corn (Late Summer’s Gold)
It’s hard to beat a simple ear of corn, buttered and salted. But this week I’ve been tossing corn into salads and skillet meals for easy weeknight dinners. If you’ve still got a basket or two, or your farmers’ market is still brimming with fresh ears, here are a few of my favorite corn recipes:
Skillet Cornbread (Always fun in late summer), or this cornbread recipe with creamed corn is delicious too!
Grilled Ribeye Steaks with Corn & Chimichurri for an indulgent feast!
2. A Sunday Reset (Back-to-School Edition)
Sundays have always been my “reset” day. With school starting for many, it’s a good time to batch-cook something simple for lunches, wash fruit for quick snacks, or even bake a loaf of my favorite whole wheat bread for the week ahead.
Last Friday, I posted a new recipe on the blog that’s perfect for meal prep: Apple Oatmeal Bread. It’s hearty and comforting, ideal for slicing into lunchboxes or enjoying with afternoon tea.

Wherever this Sunday finds you — gathering the last peaches, savoring corn on the cob, or sharpening pencils for a new season — may these simple Sunday ideas bring inspiration and a great start to your week!
