What to Cook This Week: A Summer State of Mind
Light, fresh dinners for the first full week of summer
The first full week of summer is here, and if you’re anything like me, there’s something special about the quiet of an early Sunday morning. A moment to sip coffee, plan the week ahead, including dinners for busy summer days.
This week’s meal plan is full of light, simple recipes that make the most of the season without a lot of effort—because summer cooking should feel easy and good.
Whether you're planning your week with your favorite morning brew or prepping between weekend errands, I hope these dinners add flavor and inspiration.
Whether you're following along with our June Monthly Meal Plan or just looking for a few fresh ideas, here’s a new set of dinners to enjoy this week.
Weeknight Dinner Plan: June 23-27
Monday: Crockpot Stuffed Peppers
Easy to prep with no precooking needed. It’s a vegetarian slow cooker meal filled with summer flavors!
Tuesday: Sheet Pan Chicken with Avocado Caesar Salad
Light and simple, this sheet pan dinner is easy to prep and filled with smoky flavors and creamy dressing. Sheet pan dinners are perfect for summer meals!
Wednesday: One Pot Pasta
A mid-week dish that’s hearty and easy to tweak with your favorite meat, pasta, and veggies! It’s also a 31Daily reader favorite.
Thursday: Honey Glazed Salmon
This 4-ingredient, 20-minute dinner is perfect for summer evenings. Wholesome, nourishing and easy! Serve with your favorite greens.
Friday: Greek Turkey Burgers
It’s burger and grilling season— this is my personal favorite with Mediterranean flavors and lighter, healthier ingredients. Serve with sweet potato fries for a healthy side.
Featured Dessert
It’s s’mores season! Soft, chewy, and full of nostalgic flavor—these Graham Cookies are everything you love about graham crackers in cookie form. With warm notes of honey, brown sugar, and a hint of cinnamon, they’re a cozy, simple, and endlessly versatile treat.
